  • Megan - I just bought your ice cream book and am SO EXCITED to get started! Looking at the raspberry sorbet, can I substitute strawberries? Would I still need to press them through a sieve? Would any ratios change?

    • carrie - Hi Megan! I don’t know *for sure* because I haven’t tried it with strawberries but if I were in your shoes I would cut down the water by 1/2 cup (4 fl oz). I would still press them through a sieve, but then I’m a purist ;-) If you don’t care about having tiny pips then don’t sieve, but I think the texture is way better for a few minutes of effort. Let us know how it goes!!ReplyCancel

      • Megan - The flavor was delicious! It was my boys’ favorite “healthy ice cream” and I’ve made 5 of your recipes. I did sieve it, but a LOT of seeds still got through. I’m fairly certain I have a fine mesh sieve like you recommended. Just wondering if you’ve tried sieving strawberries and how well it worked for you.
        Also, I made the chocolate peanut butter ice cream with the peanut butter drops. The drops tasted more like coconut than peanut butter and were dry. Do you have a suggestion to make them more peanut-buttery?
        I can’t thank you enough for your recipes. I’ve had ice cream in my freezer CONSTANTLY since buying your book and the pounds are still dropping! :DReplyCancel

        • carrie - Hey Megan – not sure on the PB Drops – much be the brands of PB and coconut flour that you used :-( But let me think on that. The problem is you need to be able to make drops which requires the PB to be stiffer than it comes in the jar. Soooo glad you loved the ice cream. Strawberry seeds are much smaller and you need a seriously fine mesh sieve to catch them all. I have sieved one heck of a lot of strawberries in my life!!ReplyCancel
