Chocolate Cupcakes

Chocolate Cupcakes Keto Low Carb

What You Need

  • 4 ½ oz. butter, gently melted
  • 1 ½ tsp. vanilla extract
  • 3 eggs
  • 3 TBSP milk of your choice (almond, Fairlife, etc)
  • ½ oz. cocoa powder
  • 2 oz. xylitol or erythritol
  • 1 ½ tsp. baking powder
  • 1 serving Chocolate Keto Chow (Cheap Chow here! No code required) [SEE TIPS BELOW TO MAKE WITHOUT KETOCHOW]
  • 1 TBSP konjac flour
  • 2 TBSP powdered gelatin


What You Do

  1. Pre-heat the oven to 350F.
  2. Put the melted butter, vanilla extract, eggs and milk into a medium-sized bowl and whisk together well.
  3. In another bowl, whisk together the cocoa powder, sweetener, baking powder, Keto Chow, konjac flour and powdered gelatin until completely mixed.
  4. Add the dry ingredients to the egg and butter mixture in 4 separate additions, mixing well between each addition.
  5. Using a ¼ cup, spoon the mixture evenly into 12 silicone muffin cups in a muffin pan.
  6. Bake in the oven for 18 minutes.
  7. Remove from the oven and carefully flip each silicone cup onto a cooling rack and let the cupcakes cool.
  8. Once completely cold, pipe Mocha Buttercream (Mocha Buttercream recipe) onto each cupcake.
  9. Store cupcakes in an airtight container on the counter if eating that day, otherwise keep them in the fridge.


Top Recipe Tips

  • If the cupcakes have been stored in the fridge, microwave on LOW for 10 seconds and they will be perfectly revived!
  • The cupcakes do firm up over time, but the above microwave trick works well to return them to their just-baked state.
  • To make without the KetoChow: Omit the milk, KetoChow, konjac flour, and gelatin. Add an additional 1 ½ oz. cocoa powder, and ¼ tsp. sea salt. Bake for 15 – 17 minutes.
