Chicken Meatball Egg Salad

Chicken Meatball Egg Salad Keto Low Carb

What You Need

  • 8 hard boiled eggs, cold
  • 8 oz. red pepper
  • 1 lb. chicken meatballs (I used these)
  • ½ TBSP dried thyme
  • Juice and zest of one lemon
  • 3 TBSP sour cream
  • 3 TBSP mayonnaise
  • Sea salt and ground black pepper to taste


What You Do

  1. Chop the hard boiled eggs, red peppers, and meatballs into like-sized pieces and place in a large bowl.
  2. And the dried thyme, lemon zest and juice, sour cream, and mayonnaise and toss tougher well until everything is well coated.
  3. Season to taste with sea salt and ground black pepper, spoon into a lidded container and store in the fridge, preferably overnight until ready to serve. *Overnight in the fridge allows the flavors to meld and improve.
