What You Need
- 8 hard boiled eggs, cold
- 8 oz. red pepper
- 1 lb. chicken meatballs (I used these)
- ½ TBSP dried thyme
- Juice and zest of one lemon
- 3 TBSP sour cream
- 3 TBSP mayonnaise
- Sea salt and ground black pepper to taste
What You Do
- Chop the hard boiled eggs, red peppers, and meatballs into like-sized pieces and place in a large bowl.
- And the dried thyme, lemon zest and juice, sour cream, and mayonnaise and toss tougher well until everything is well coated.
- Season to taste with sea salt and ground black pepper, spoon into a lidded container and store in the fridge, preferably overnight until ready to serve. *Overnight in the fridge allows the flavors to meld and improve.
