I purchased your ice cream cookbook and I just want everyone to know it’s fabulous! I’ve made the vanilla, strawberry, Jiving Java, Butter Pecan and Chocolate. I’m a huge lover of almond and chocolate together, so after trying your recipes and seeing how they work… I subbed the vanilla extract for almond and threw in some toasted, chopped almonds. You make it positively easy to eat like it’s sinful! My boyfriend and I’ve been eating KETO for nearly 7 months, I’ve lost 47 pounds and he 42. I won’t try to trick myself into thinking that french fries and sugar don’t taste good… but they make me feel BAD! It’s absolutely NO challenge to stay KETO with delicious recipes like yours. (I’ve made the Loaded Twice Cauliflower and the Lemon Marscapone Tarts also.)This food tastes great to anyone, low-carb lifestyle or not. Thanks so much for sharing your knowledge with us!

MeganI just found out my son has a fructose intolerance, which limits quite a bit what he can eat right now. We were also told he needs to avoid xylitol and erythritol, both of the sweeteners I have on hand, and what are in your recipes. Of the “generally tolerated” sweeteners, which do you recommend?
aspartame, saccharin, sucralose, turbinado
Of course, we also got a list of of lot of sugar products he can have, like table sugar, brown sugar, etc. Would really prefer to avoid those…

Pat JIn your Keto Ice Cream book, you recommend using powdred xylitol. On your web site page on ingredients (link from book) you have two linked sources for xylitol, but I searched on both (iherbs and Amazon) and I do not see any powdered xylitol. You write in the book you can pulverize the granular yourself but buying it powdered is better. Do you have a source for powdered xylitol that you trust is manufacturing the birch product? Thank you for all your great work on Keto recipes. I just bought your Keto ice cream recipe book.
My problem is that I am allergic to almonds – can you suggest a good substitute for almond milk (is hemp milk ok?) and almond flour? I also cannot tolerate coconut flour.
And there there’s the xylitol issue. I have dogs, and I just won’t risk having them get some of it. I can just see a guest offering one of them a bowl to lick out, when I’m not looking. What about allulose? Would that work as a substitute?

carrieKathy – you can sub the almond milk with any nut milk you choose. I am working on a successful sub for xylitol. Make sure you subscribe so you know when I’ve done it!

I recently purchased your Keto ice cream e-book and can’t wait to get started churning delectable ice creams.
Seeing that correct measurements are of vital importance, could you please advise if the cup size you are referring to is 250 ml? Here in Australia 1 cup = 250 ml. When I convert, for example, 8 oz to ml, my conversion tool comes up with 236ml.
Apologies for being pedantic, but this is important to me.

DorothyCarrie – I want to make your sugar cookies. I don’t have konjac flour/powder, but I have arrow root and guar gum. Ok to substitute? How much?
carrieDorothy – arrowroot is 100% starch, so not keto and not recommended. Guar gum has a completely different function to konjac flour. If you want a successful result you need to use the right ingredients. I realize this isn’t the answer you wanted, but my job here is to help you be successful. Love to you!
